How thick should an enamel plate be? 0.4mm+ steel gauge for daily use; double-coat enamel for chip resistance.
Can I put enamel plates in the oven? Up to ~250°C is fine. Don't put cold plates into a hot oven (thermal shock = crazing).
What if my enamel plate chips? Small chips on the rim are cosmetic. Chips on the food contact surface (where steel is exposed) — retire that plate, replace.
