What's the best pot for cooking pap in South Africa?
A heavy-bottom aluminium pot with at least 3 mm base thickness. The traditional SA pap pot. For a family of 4-8 people, the Sapphire S7 10pc set (R599) is the value benchmark; for 8-12 people, the Bon Voyage NW8 (R289) single catering pot.
Why does pap burn in stainless steel pots?
Stainless steel conducts heat ~12× worse than aluminium. Direct flame creates a 4-6 cm hot ring under the burner while the rest of the base stays cooler. As pap thickens, the hot ring scorches the bottom layer. Solution: use sandwich-bottom (encapsulated-base) stainless steel, or switch to aluminium.
What pot size do I need for 50 people?
A 35-50 L pot. The Bon Voyage NW40 (40 L, R 839) is the standard SA catering size. For larger events (70+ people), step up to NW55, NW70, or NW85.
Can I cook pap on an induction stove?
Yes, but only with sandwich-bottom stainless steel or cast iron. Plain aluminium is not magnetic and won't heat on induction. The Capsule Sandwich Bottom Stockpot (R899) is the recommended choice.
How do I stop my pap from burning at the bottom?
Use a heavy-bottomed pot (aluminium 2 mm+, or cast iron), bring water to a rolling boil FIRST, then reduce to low heat BEFORE adding maize meal. Use the South African cutting motion (not vigorous stirring). Cover and simmer 20 minutes. See our full pap cooking guide.
