Non-Stick vs Stainless Steel Pans: The Egg-and-Sear Test
Non-Stick vs Stainless Steel Pans: The Egg-and-Sear Test
TL;DR
For eggs, pancakes, fish fillets, and low-fat cooking → non-stick wins. The Tiger NS15 15pc Marble Coating Set (R1,999) replaces a kitchen of single non-stick pans in one purchase.
For searing steak, building fond for sauces, and induction cooking → stainless steel wins. The Bon Voyage S27 27pc Set (R1,399) handles every job non-stick can't.

What Non-Stick Is Actually Good At
Sunny-side-up eggs without butter pooling
Crepes / pancakes that flip in one piece
Fish skin that releases instead of tearing
Low-fat / weight-loss cooking with minimal oil
Not good at: Maillard-browned steak, long high-heat reductions, building fond for pan sauces.
What Stainless Steel Earns Its Place For
Searing: properly preheated SS pan browns proteins evenly.
Induction: sandwich-bottom SS is induction-native.
Heritage: a SS set today will likely outlive its owner.
No — marble-coating uses a granite/marble particle layer (PFOA-free) bonded to aluminium. Both are non-stick but the SA non-stick we stock is PFOA-free.
How long does a non-stick coating last?
With wooden/silicone utensils and gentle cleaning: 3–5 years. Metal utensils or scouring pads can cut that to 12 months.
Why do my eggs stick to my stainless steel pan?
Almost always under-preheat. Heat the dry pan until a water droplet beads and dances; then add oil; then the egg.
Can I sear a steak in non-stick?
You can cook it; you can't sear it properly. The coating disrupts the protein-to-metal bond that produces a Maillard crust.
Is non-stick safe at high heat?
Modern PFOA-free coatings are safe at ≤230°C. Avoid empty pre-heating; coating breakdown begins above ~260°C.
It's out of this world. The glacier white color the smooth glossy texture are indescribable.
