Aluminium vs Stainless Steel Bobotie Dish — Which Material Browns Better

Aluminium vs Stainless Steel Bobotie Dish — Which Material Browns Better

TL;DR

For bobotie specifically, aluminium with oven-safe handles wins for browning evenness and price. Stainless steel wins for longevity and dishwasher use. Both bake bobotie well — pick by price and how much else you’ll cook in the dish.

Why The Choice Matters Less For Bobotie

In a closed oven at 180°C, the air does most of the heat transfer — so pan material conductivity matters less than on the stovetop. Both bake bobotie evenly.

Where Material Still Matters

  • Handles: Aluminium pots often have Bakelite handles (not oven-safe >180°C). SS pots typically have steel handles (oven-safe to 260°C+). For bobotie at 180°C: borderline for Bakelite, safe for steel.
  • Acid resistance: Bobotie has chutney/tomato/vinegar — mildly acidic. Aluminium picks up faint metallic note over multi-hour cooks; not noticeable in a 60-minute bobotie. SS unaffected.
